Production area: the whole territories in the municipal district of Novello.
Grape variety: 100% Chardonnay.
Harvest time: second week of September.
Vinification: soft winepressing followed by the must fermentation in stainless steel tanks for about 10 days. The wine is bottled late in the spring after a short ageing during which it undergoes some racking.
Minimum total alcohol content by volume: 12-13%
Minimum total acidity: 5.5-6.5 ‰, pH 3.20-3.40
Colour: light straw yellow.
Bouquet: clear scents of acacia flowers.
Flavour: fresh and fruity.
