NebbioloProduction area: the whole territories in the municipal district of Novello.

Grape variety: 100% Nebbiolo (Lampia subvariety).

Age of vines: 6 years.

Harvest time: mid-October.

Vinification: traditional method. The must ferments in contact with the skins for about 7 days with frequent pumping over during the day.

Maturation in cellar: after 3 months in a stainless steel tanks and some racking, the new wine is kept in 500-litre oak barrels for 6 more months before being bottled.

Minimum total alcohol content by volume: 13-14%
Minimum total acidity: 5.3-6 ‰, pH 3.15-3.30

Sensory analysis
Colour: ruby red with light garnet reflections.
Bouquet: intense and fruity.
Flavour: full bodied, dry, properly tannic with scents of liquorice and ripe fruit.
